L'Ora Etica.
Fruit does not wait for dessert. White peach with rainbow trout, strawberries among the risoni and the caviar, cherries beside veal tongue in red wine. Seven courses of early summer, where elderflower and artemisia weigh as much as the fish. Eel with anise, Mancini fettucce with red peppers and liver, and the embers, which arrive without announcing what they carry. Apricot and rosemary at the close: sweet, but not entirely.

The exceptions, declared.
Wine escapes the Ethical Hour, but not its horizons. A great bottle is born where the vineyard knows how to become itself, and that place is almost never sixty minutes from here. It will not be contained by place.
The same goes for the pasta, which comes from the Marche and crosses the boundary. Two exceptions, declared: not a quiet waiver, written here.
The principles remain. Fish, vegetables, herbs, the egg: everything fresh respects the hundred-kilometre radius.

The menu is a photograph of the moment.
What you read on the menu is an instant. Spring sliding into summer, the first cold that changes the air, the vegetable waited on for months and finally here: the menu catches the passage and carries it to the table.
It changes each time because nature changes first. Nothing is decided at a desk: nature sets the rhythm, and we keep to it.

- What does Horto's one-hour rule mean?
- That nothing fresh travels more than sixty minutes to reach the kitchen. A hundred-kilometre radius, twenty-five growers: journey time becomes the measure of freshness.
- What happens if a product does not respect the rule?
- If it is fresh and comes from too far away, it does not go on the menu. Only wine, coffee and a few other larder goods stand outside the rule, because they live on craft rather than freshness. For everything fresh the season commands, one day at a time.
