What we measure
The emissions attached to every course: from the ingredient to the journey, from the cooking to what happens to the waste. Not an estimate for show, but a calculation built on real figures from our own chain.

With an independent consultant, on a recognised methodology. The one-hour sourcing, the energy of the LEED building and the zero waste all enter the calculation: they are the levers we can genuinely move.
What we publish
Once a year we set out the figures: what has improved, what has not, and what we intend to try next. Transparency is worth more than perfection, and a published figure is one anyone can check.

- Yes, with an independent consultant, course by course. We publish a report once a year.
- Is Horto carbon neutral?
- No, and we do not claim to be. We measure, we reduce where we can, and we publish the figures openly, without offsets that would flatter the result.
