Water without plastic.

At Horto we serve BWT microfiltered water, still or sparkling. We import no bottles. A simple decision, with a disproportionate effect on our waste.

What we changed.

Until 2022 we served mineral water in glass bottles. An ordinary choice for a starred restaurant, and one that leaves hundreds of kilos of glass to dispose of every week. The BWT microfiltration fitted in the kitchen filters the mains supply, controls its limescale and chlorine, mineralises it, and chills or carbonates it.

The effect in numbers.

-92% glass bottles per year compared with 2022. No single-use plastic in the kitchen or the dining room. One service bottle only, reusable glass, washed and capped in house.

Why we say it.

Not because it is worth boasting about, but because it is the easiest thing to copy. A restaurant looking for one measurable place to start can start here.
