Norbert Niederkofler.

Three stars at Atelier Moessmer in Brunico, and a philosophy with a name: Cook the Mountain. At Horto he stands behind the project and sets the direction of the kitchen, bringing into the heart of Milan an idea born among the Dolomites: begin with the place, and let it set the pace.

If I lived by the sea I would have made Cook the Sea. If I lived by the desert I would have made Cook the Desert.

A pioneer of sustainable cooking long before the phrase became fashionable. Niederkofler begins with the season and with the people who work it: small growers kept as relationships, not accounts. The beauty of slow time, and ingredients that are never squandered. That is Cook the Mountain among the Dolomites; in Milan the landscape changes, the principle does not.

Norbert sets the course. The daily running of the kitchen belongs to resident chef Alessandro Pinton and sous chef Manuele Garello, who follow the season with him, choose the growers and build the two tasting menus. One shared vision, in which every choice comes from the same idea.
