From Cook the Mountain to L'Ora Etica

Cook the Mountain was born in the Dolomites, with Norbert Niederkofler. In Milan the landscape changes: plain, river, rice fields, rooftops. The method does not: place and season come before the dish. Whatever the growers can bring within the hour, right now, opens and closes the menu. In Milan it becomes L'Ora Etica: measurable sustainability, small growers we call by name, figures anyone can check, waste cut to the bone.
