Small growers we call by name, a season that decides for us. Herbs from the garden, the season's first pickings, freshwater fish; vegetables front and centre, not out of virtue but out of taste. Whoever grows it, whoever delivers it, whoever cooks it: the same people, the same seasons. And what stays behind in the kitchen is never simply waste.

More than a dinner
From May to October the seventh floor opens onto the terrace, the spires a step away. Breakfast, lunch, aperitivo and dinner: below, the city with its clamour and its hurried steps; up here, the hours slow down.

Michelin Star. The same year, the Green Star for Sustainability. The first rewards a kitchen that thinks, that offers, that has something to say. The second rewards short sourcing, zero waste and a respect that reaches the land, the seasons and the people. Taste and responsibility: one kitchen, two ways of looking at it.

From the mountains to the city
Three Michelin stars in Brunico and a lifetime spent reading the Alps: it is Norbert Niederkofler who shapes the culinary strategy, carrying his Cook the Mountain from the Dolomites into the centre of Milan as L'Ora Etica. In the kitchen every day, resident chef Alessandro Pinton, born in Padua in 1998 and raised between Le Calandre and Il Luogo di Aimo e Nadia. Beside him, sous chef Manuele Garello, previously at St. Hubertus with Niederkofler himself.
